How much work can you actually do?

Not how much you would like to sell. The number of pieces of work you can deliver in a year at the standard you say you work to, allowing for holidays, admin and the weeks when nothing comes in.

What does the upper end of your market ask?

Google the best regarded firms in your sector, ring them, and ask them to quote you for the same piece of work. This is not what the market can stand, it is only what they currently charge.
